Lady's Kisses

These pastries are very popular, the original recipe contains the same quantity of flour, butter, almonds and chocolate, but here I made some small variations that make these in my lady's kisses even tastier.


Ingredients (for about 30 cakes):

120 grams of flour
100 g blanched almonds or hazelnuts
100 grams of sugar
70 g butter, softened
1 egg yolk
1 teaspoon baking powder
1 tablespoon brandy
1 teaspoon vanilla extract
a pinch of salt (just slightly)

70/80 gr of dark chocolate

Preparation:

Blend the almonds in a blender with the sugar.
Combine sugar and chopped almonds, flour, egg, baking powder, salt, vanilla, brandy and softened butter, mix until mixture is smooth and compact.

Allow to stand in the refrigerator wrapped in a film for about 30 minutes.

Shape into balls the size of a dime and 5 cents if you have time, let stand in refrigerator for half an hour or more, or arrange on the plate covered with parchment paper.

Bake at 160 degrees for 15 minutes (do not brown)

Let cool and in the meantime melt the chocolate (in a double boiler or microwave).
Place the melted chocolate on a biscuit and allow to set for a while ', once the chocolate has reached the right consistency to place another cookie on top and let cool until the chocolate is completely solidify.
