This cake is great for a snack or for dinner, either alone or stuffed.
Here is the recipe.
Ingredients:
500 g flour 00
150 g boiled potatoes
150 g of milk
1 teaspoon of sugar
15 g of fresh yeast
1 tablespoon olive oil
2 teaspoons of salt
coarse salt and rosemary dried leaves for garnish
Preparation:
Boil the potatoes, pass them with a potato masher and leave to cool.
Meanwhile, dissolve the fresh yeast in warm milk with a teaspoon of sugar together and pour into a bowl with half the flour.
Mix together, form a ball and cover for 2 hours, until doubled in volume.
Combine yeast mixture, mashed potatoes, the remaining flour and a pinch of salt.
Knead the dough on a pastry board and beat again.
Roll out the dough with a rectangular shape about 2 cm high., On a baking tray with a sheet of parchment paper brushed with the 'oil.
Let rise another 2 hours.
Brush with an emulsion of water and oil across the surface of the cake, was formed with the fingers and sprinkle with coarse salt and dried rosemary leaves.
Bake at 150 degrees for 30 minutes. Serve warm, cut into squares or stuffed.
