Almond biscuits

These pastries are not only easy to make and are also fast to cook, so if you have to prepare something special for the hour of tea and you do not have much time to devote, you've found the right recipe.
Easy, fast and delicious.

Ingredients (for about 16 cakes):

100 g of almonds
100 grams of sugar
1 egg white
some bitter almonds or 1 vial of almond aroma, in the supermarket where I am going to love the almonds are not there, if you can find them more ;-) pistachio / almond / cherry glazed divided into two (for garnish)

Preparation:

Chop the almonds finely and put in a bowl with sugar and add the 'egg white. The egg white should put a little 'time, so be careful and proceed by degrees the dough should be quite hard.

Add a little 'drops of almond flavoring (I have added a dozen) and form into balls (or with a pocket for cakes you can make very beautiful tufts, but if you want to make the pastries are really fast with the ball even before it), roll it with the palm of your hand on the work surface and place on a baking sheet covered with parchment paper.
Decorate with pistachios, almonds or cherries glazed split in two.

The ideal would be to dry all night, but like I said, it's a quick recipe, in fact I put them in the oven at 50 ° keeping a little 'open for half an hour or so.

Remove them from the oven, preheat to 200 degrees and bake for just 5 / 10 minutes with the pan of the oven positioned a little 'higher.
Attention to the cooking should be colorful and just so you'll still soft of flaky pastry with a soft heart of almonds.

Allow to cool and here are your cakes ready to serve!
